Is desi ghee healthy? What the evidence actually says

Desi ghee is a concentrated fat, and roughly two thirds of it is saturated fat. WHO puts the mean saturated fat content of dairy fat at 67% of total fatty acids, and a 2024 laboratory analysis of retail ghee measured 64.26 g per 100 g of fat. So “is desi ghee healthy” is not quite the right question. It is how much saturated fat your whole day already holds, because the limit behind all that “in moderation” advice is a limit on the day, not on the spoon.

Is desi ghee healthy? How much of it is saturated fat

Roughly two thirds, and two separate measurements agree. WHO gives dairy fat a mean saturated fat content of 67% of total fatty acids, and a 2024 analysis of 60 best-selling retail samples measured 64.26 g of saturated fat per 100 g of ghee fat.

That second figure comes from retail ghee bought in Tehran, not from Pakistani desi ghee. It is the closest measurement published, and it lands near WHO’s figure for dairy fat generally. The same analysis measured butter at 66.69 g per 100 g of fat, so “is ghee better than butter” turns out to be a smaller question than it looks.

You will find full nutrition panels for ghee elsewhere, with calories, cholesterol and grams per teaspoon. There is none here, on purpose. The Indian food composition table’s fatty acid page does not survive text extraction and the Pakistan table is an unreadable scan, so those figures cannot be sourced.

The saturated fat limit is a whole-day number

WHO recommends that adults and children reduce saturated fat to 10% of total energy intake, and calls that a strong recommendation. WHO’s own worked example does the arithmetic: at a daily intake of 8.7 MJ, about 2,080 kcal, 10% comes to about 23 g of saturated fat.

That 23 g covers everything you eat in the day, not the ghee alone.

Read the 23 g as arithmetic, not as an allowance handed to you personally. It is what WHO’s percentage comes to at the energy intake WHO itself used.

What it does tell you is where the counting happens. The ghee on the roti, the tarka in the daal, the nihari at the weekend and the halwa at a wedding all draw on one daily total, and so do milk, dahi, meat and biryani. Someone who has a careful spoon of ghee and then a plate of nihari has not stayed inside anything.

No source publishes a safe number of spoons of desi ghee, and this article will not invent one. Turning grams of saturated fat into teaspoons of ghee needs composition data no Pakistani or Indian food table publishes in usable form. WHO’s closest thing to a per-food instruction is that foods high in saturated fat “should be consumed sparingly”.

Does cutting saturated fat change your heart risk?

Evidence suggests it does, and the two strongest reviews disagree about who gets the benefit. A 2020 Cochrane review of 15 trials in 56,675 adults found that reducing saturated fat cut combined heart and circulatory events by 17% (risk ratio 0.83), on moderate-quality evidence.

The same review found little or no effect on deaths from any cause, or on deaths from heart and circulatory disease. Fewer events is not the same as living longer, and Cochrane did not find the second one.

A 2026 review in the Annals of Internal Medicine pooled 17 trials in 66,337 adults and sorted them by how much heart risk people started with. It found that for people at low cardiovascular risk, reducing or modifying saturated fat has little or no benefit over five years, with the benefit concentrated in people at high risk. So the two reviews disagree on whether a low-risk adult gains anything, and this article will not pick a winner between them.

They agree on one point, and it can be said plainly: replacing saturated fat with polyunsaturated fat lowers non-fatal heart attacks. The 2026 review put the risk ratio at 0.75, and the American Heart Association concluded that replacing saturated fat with unsaturated fats, especially polyunsaturated fats, will lower the incidence of cardiovascular disease. WHO’s replacement recommendation points the same way. Note the word replacing. These findings are about what goes in the pan instead, not about simply eating less.

Is desi ghee different from other saturated fats?

Almost nobody has tested it in people. Limited evidence exists, from two small human studies pointing in opposite directions, and no systematic review of ghee feeding in humans has been published. One is a randomised trial in 110 adults in Iran with fatty liver disease who ate ghee daily.

Swapping the ghee for rapeseed oil for 12 weeks was followed by total cholesterol falling 17.2 mg/dl and LDL falling 7.5 mg/dl. Two caveats. These were patients with a liver condition, not general readers, and the same group also lost 4.3 kg, so weight loss and the fat swap cannot be told apart here.

The other points the other way. An uncontrolled before-and-after study in healthy volunteers found total cholesterol and LDL fell after they ate cow ghee. It had no control group, and its abstract does not report how many people took part, how much ghee they ate, or for how long.

So the ghee-specific evidence in people is thin and inconsistent. Anyone telling you ghee behaves differently from other saturated fats is going beyond what has been measured.

The weight loss claim is simpler, because there is nothing to weigh up. No human trial has tested whether adding desi ghee to your diet helps you lose weight, and no meta-analysis exists. Searches of the trial literature turn up animal studies and a preprint, and nothing in people. The claim comes from marketing, not from research.

Desi ghee is not banaspati, and the difference matters

They are two different products. Desi ghee is milk fat. Banaspati is vegetable oil partially hydrogenated until it sets solid, and Pakistani research names it as the country’s major dietary source of trans fatty acids.

Evidence suggests Pakistan’s rules are still behind. WHO’s December 2023 status report placed Pakistan in the group it labels “less restrictive TFA limits” for trans fat, not the best-practice group, and said Pakistan “should strengthen their policies”. A 2021 regional review found Pakistan absent from the eight countries with a mandatory approach, and a 2020 Pakistani review called the rules then in force “insufficient and not in line with global best practices”. No current numeric limit could be retrieved from the Punjab Food Authority or any other Pakistani regulator, so there is no percentage here. What is sourced is the status, and it is dated.

This contrast settles nothing about desi ghee itself. Banaspati is a trans fat question. Desi ghee is a saturated fat question, answered by the whole-day number above. If your household buys banaspati because it costs less, that is a price problem, not a discipline problem. The useful step is simply knowing which one is in the tin.

What heat does to desi ghee

Limited evidence, from a single Pakistani laboratory study of buffalo-milk desi ghee. It describes 140 to 170°C as safe for cooking and frying, a range where the ghee “does not lose much of its molecular composition”. Above that range the ghee itself changes.

The same study reported that rising temperature makes vitamins and other natural compounds in the ghee deteriorate, and that its marker for an oxidation product climbs as the temperature climbs. That is one laboratory study using fluorescence spectroscopy, and it describes what happens to the ghee, not what happens to the person eating it. No health claim can be built on it, in either direction.

You will see a smoke point quoted for ghee elsewhere, usually inside a ranking of oils. No retrievable source gives ghee’s smoke point, and none compares it with sarson ka tel, sunflower or canola oil, so there is no such figure here. There is also no thermometer in your karahi, which limits what that temperature range can tell you at home.

If you have high cholesterol or heart disease, this number is not yours

The 10% figure is a population figure. WHO names its audience as policy-makers at the national, local and other levels, and managers and implementers of programmes, and it sets no separate, tighter number for people with raised LDL cholesterol or existing heart disease.

So the 23 g worked example is not a personal target, and there is no published number aimed at you instead.

That is not a gap to fill yourself. If you have been told your cholesterol is high, if you have heart disease, or if you have diabetes, the person who sets your saturated fat number is your doctor or dietitian, working from your own results.

What to check, and when to ask

Check the tin first. Read the ingredients rather than the picture on the front, and see whether you are buying desi ghee or banaspati. They raise different questions.

Then count the day, not the spoon. The ghee in the paratha, the tarka in the daal and the sweet after dinner all come out of one daily total, along with the milk, dahi and meat.

Then raise it with a doctor if you have been told your cholesterol is high, if you have heart disease or diabetes, or if someone at home was told to cut down on ghee and nobody said by how much. That last question has a real answer, and it is your clinician’s to give.
