Why choose multigrain atta and whole grains
Most Pakistani homes eat roti two or three times a day, so the flour you choose matters. Multigrain atta made with barley, oats, millet (bajra), chickpeas (chana) and flaxseed (alsi) contains more fibre than plain refined flour, which helps you feel full for longer and slows how quickly the meal raises blood sugar. Our glycaemic index guide to Pakistani foods shows how common grains compare.
Cooking with quinoa and multigrain flour
Grain Mix Flour kneads and cooks like your usual atta; let the dough rest for 15 minutes for softer roti. White quinoa (keenwa) is naturally gluten-free and cooks in about 15 minutes. Rinse it well, then use it in place of rice in pulao, khichdi or salads. For a full day of meals built around these swaps, see our practical meal plan.
